炙燒鰹魚是高知料理的靈魂——新鮮的鰹魚以熊熊燃燒的稻草烈焰兩面各炙燒20秒,接著切成厚片,配上蒜末、薑末與柚子醋享用。稻草炙燒(藁焼き)技法能產生瓦斯爐無法複製的焦香——濃烈的煙燻風味,介於生食與熟食之間搖擺不定。魚肉中心保持鮮紅冰涼;外層則局部焦化成黑。
這道料理誕生於江戶時代的高知,最初是為了在運輸過程中保存魚肉。如今它是縣內的招牌美食,從居酒屋到米其林認證的專門店都能見到。位於高知市中心的弘明市場是最容易入門的地方——數十個攤位現點現做炙燒鰹魚,街上就能看見戶外烤爐的火焰。你買好後坐在共用長桌,與從小就每週來這裡的當地人一起用餐。
