Hinai-jidori (比内地鶏) is one of Japan's three premier chicken breeds (alongside Nagoya Cochin and Satsuma chicken), native to northern Akita Prefecture. The birds are raised free-range for 120-150 days (triple the time of industrial broilers), resulting in firmer, more flavorful meat with rich umami and slight gaminess. Hinai-jidori is leaner than standard chicken, with pronounced texture — thighs are especially prized for their chewiness and deep flavor.

The chicken is prepared multiple ways: yakitori (grilled skewers with tare sauce or salt), oyakodon (chicken-and-egg rice bowl), and kiritanpo nabe (hot pot). Akita City's izakayas and specialty restaurants serve all variations. The signature dish is Hinai-jidori yakitori — thigh meat grilled over binchotan charcoal, skin crisped to crackling, interior moist and savory. Paired with local sake, it's Akita's definitive taste.

Guía privilegiada

Premium
**Yakitori ordering:** At yakitori-focused restaurants, order an assortment: momo (thigh, もも, most popular), kawa (skin, 皮, crispy and fatty), negima (chicken-and-scallion, ねぎ間), tsukune (meatball, つくね), and rebā (liver, レバー, creamy and rich). Hinai-jidori's thigh is the star — firmer texture than standard chicken, requiring slightly longer chewing but delivering concentrated savory flavor. Order 2-3 skewers per person as an appetizer, then add more as needed. **Oyakodon variation:** Hinai-jidori oyakodon uses both chicken and eggs from the same breed, creating a rare synergy. The eggs have darker yolks (orange vs. pale yellow) and richer flavor. The chicken is simmered in sweetened soy sauce and dashi, then bound with half-cooked eggs and poured over rice. The result is silky, umami-rich, and deeply satisfying. The best oyakodon spots slightly undercook the egg, leaving it custardy. **Kiritanpo nabe pairing:** As mentioned in the kiritanpo entry, Hinai-jidori is the essential chicken for authentic kiritanpo nabe. The bird's firm texture withstands 20-30 minutes of simmering without disintegrating, and the bones/skin release collagen into the broth, enriching it. When ordering kiritanpo nabe, confirm it uses Hinai-jidori (some budget restaurants substitute industrial chicken). **Sourcing and cost:** Hinai-jidori is 2-3x more expensive than standard chicken (¥1,500-2,000 per kilogram vs. ¥500-700). Akita Prefecture produces ~300,000 birds annually, with most consumed within Akita or sent to Tokyo high-end restaurants. Supermarkets in Akita sell Hinai-jidori fresh and frozen — useful for self-catering or taking home. New Chitose Airport (Sapporo) sometimes stocks Hinai-jidori in the frozen section. **Breed characteristics:** Hinai-jidori is a cross between indigenous Hinai fowl (比内鶏, now rare) and Rhode Island Red chickens. The birds are brown-feathered, medium-sized, and raised with 50% of diet from corn and other grains. The free-range requirement (minimum 6 hours per day outdoors) and long grow-out period (120+ days) ensure slow muscle development, hence the firm texture and concentrated flavor.
