Awamori Distillery Tour

Awamori (泡盛) is Okinawa's indigenous distilled spirit (25–43% alcohol), predating Japanese shochu by 500 years. It's distilled from Thai indica rice using black koji mold (unique to Ryukyu), then aged in clay pots. The aging process (kusu, 古酒) creates smoother, more complex flavors — awamori aged 3+ years is considered premium, 10+ years is rare and expensive.
Multiple distilleries in Naha offer free tours showing the fermentation, distillation, and aging processes, followed by tasting sessions. Helios Distillery (ヘリオス酒造) and Zuisen Distillery (瑞泉酒造) are most accessible for English-speaking tourists.
