Kaitenzushi (回転寿司, 'rotating sushi') or conveyor belt sushi was invented in Osaka in 1958 when Yoshiaki Shiraishi created the first automated sushi delivery system. Plates of sushi rotate on a belt past counter seats; diners grab plates they want, and the bill is calculated by counting plates (color-coded by price ¥100–¥600 per plate). Modern chains use touch-screen ordering where sushi arrives on dedicated express lanes.

Osaka has hundreds of kaitenzushi shops ranging from ultra-budget (¥100/plate chains) to premium rotating sushi using high-quality fish. The format democratized sushi — traditionally expensive counter sushi became accessible to working-class families. The experience is quintessentially Japanese: efficient, hygienic, fun, and social.

Guide d'initié

Premium
**Sushiro recommendation:** Sushiro is Japan's largest kaitenzushi chain and offers best quality-to-price ratio. The fish is sustainably sourced, rice is perfectly seasoned, and seasonal specials rotate monthly. Order via touch screen (English available): fatty tuna (中トロ chutoro ¥300), salmon (サーモン ¥100), shrimp (えび ¥100), sea urchin (うに ¥300), and seasonal fish. The express lane delivers orders in 90 seconds. Finish with dessert plates (matcha pudding, mochi ice cream ¥200). **Kura Sushi gamification:** Kura Sushi incentivizes plate clearing — every 5 plates entered into the disposal slot triggers a gacha machine animation on your screen. Win rates are ~20% (1 in 5 games), prizes are collectible toys/figures. This gamification appeals to children and creates competitive plate-counting among groups. The system encourages over-ordering (chasing prizes), so set a budget before starting. **Etiquette and ordering:** Don't touch plates you won't eat (considered poor manners). Use the touch screen to order specific items rather than waiting for belt rotation — belt items may have been circling for 30+ minutes (time limit exists but freshness varies). Wasabi is inside sushi or available as squeeze tube at seat. Green tea powder and hot water are self-serve. Insert finished plates into the disposal slot at your seat (staff count later). Pay at register showing your seat number (staff count plates before you leave).
