Walking into a Kobe beef teppanyaki restaurant, you smell the sweet aroma of caramelizing fat before you see your table. The chef stations gleam under spotlights — polished steel surfaces so hot they shimmer. Your waiter brings a wooden box displaying tonight's cut: a 200g sirloin striated with white marbling that looks more like pink-tinted marble than meat. The production number on the certificate traces this specific cow back to its birthplace in Tajima.
Kobe beef's reputation isn't marketing hyperbole — the intramuscular fat melts at 77°F, lower than human body temperature. When the chef places your steak on the griddle, the marbling liquefies instantly, pooling around the meat. He seasons with nothing but sea salt and a crack of black pepper. The first bite dissolves on your tongue without chewing, releasing an almost sweet, nutty flavor that lingers for minutes. But at ¥35,000 for 200g, you're paying ¥175 per bite.
