Le bœuf de Hida (Hida-gyu) est le joyau gastronomique de Gifu : des bovins de race noire japonaise élevés au moins 14 mois dans les montagnes de la région de Hida, avec un persillage qui fond littéralement en bouche à température corporelle. Moins connu à l'international que celui de Kobe, le Hida-gyu rivalise aux mêmes niveaux de qualité (grade A4-A5) à des prix généralement plus abordables.

À Takayama, on peut le déguster de multiples façons : en brochette de sushi (hida-gyu nigiri) dans la rue dès ¥700, grillé au restaurant pour ¥3 000–5 000, ou dans un kaiseki complet. Les brochettes de sushi de bœuf, servies sur un cracker de riz, sont l'en-cas de rue le plus populaire du vieux quartier et un moyen accessible de goûter un wagyu de premier ordre.
