A rice ball wrapped in marinated pork belly, roasted until the outside caramelises, and wrapped again in a lettuce leaf. It was devised in 1994 as a staff meal at a shop in central Miyazaki City and put on the menu when customers noticed what the kitchen was eating.

It spread across Kyushu and then nationally as a festival and convenience food, and it is one of the more successful B-grade inventions of the last thirty years. Eaten properly it is messy: the pork renders into the rice, the marinade runs, and the lettuce is there to hold it and to cut the fat. Nikumaki Honpo on Chuo-dori still makes the original, and shops across the city sell versions.

Served in Miyazaki City and across the prefecture at specialist shops, izakaya and festival stalls. Nikumaki Honpo, which created the dish in 1994 as a staff meal, has its main shop on Chuo-dori in central Miyazaki City. The dish is a rice ball wrapped in marinated pork belly, roasted, and served wrapped in lettuce. Individual establishments' hours, rest days and prices vary; many specialist shops keep late hours.

인사이더 가이드

**It is messy and meant to be.** The marinade runs and the pork renders into the rice. The lettuce is a wrapper, not a garnish. **It started as a staff meal.** 1994, in the kitchen, and it went on the menu because customers asked what the cooks were eating. **Shops keep late hours.** This is drinking-district food in Miyazaki City and several specialists are open when the restaurants have closed. **One is a snack.** Rich enough that two is a meal. Order accordingly at the end of an evening. **It is thirty years old, not traditional.** Miyazaki is honest about this. It is a recent invention that happened to be a good one.
