Ise udon is thick, very soft noodles in a small amount of dark tamari-based sauce, with a little spring onion on top and nothing else. There is no soup. The noodles are boiled for around an hour, which destroys the chewiness that udon is prized for everywhere else in Japan, and that is deliberate.

The explanation is pilgrimage. Ise received enormous numbers of travellers who arrived tired, hungry and with unreliable digestion, and the shops around the shrine cooked noodles soft enough to be eaten quickly and to sit lightly. Everything about the dish follows from serving a crowd fast. Visitors who expect Sanuki udon are routinely disappointed; understanding why it is soft is the difference between a bad bowl and a good one.

Served across Ise, especially in the Okage-yokocho and Oharai-machi streets near the Inner Shrine and around Ise-shi and Uji-Yamada stations. The Ise Chamber of Commerce and the Ise Udon Council certify shops meeting their standards. The dish is thick soft noodles boiled for around an hour, served with a small quantity of dark tamari-based sauce and spring onion, with no soup. Individual shops' hours, rest days and prices vary; many close in the late afternoon.

**It is not Sanuki udon and is not trying to be.** Soft on purpose, for pilgrims who needed to eat fast and digest easily. Judging it by chewiness misses the entire dish. **Mix it before eating.** The sauce sits at the bottom in a small quantity. An unmixed bowl tastes of nothing at the top and of salt at the bottom. **Most shops close mid-afternoon.** The streets around the shrine run on shrine hours. Lunch, not dinner. **Look for the certification.** The chamber of commerce and the udon council certify shops that meet their standards, and the sign is displayed. **Eat it before the shrine, not after.** The Inner Shrine approach is at its quietest early, and the udon shops open in time for that.
