Jakoten (じゃこ天) is Ehime's signature fish cake made from small fish (jako — tiny sardines or anchovies) ground whole with bones, mixed with minimal flour, and deep-fried until golden and crispy. Unlike kamaboko (steamed fish cake), jakoten has a coarser texture from the ground bones and a stronger, fishier flavor. It's eaten as street food, served warm with soy sauce and grated ginger, or added to udon and oden.

The dish originated in southern Ehime fishing villages where small bycatch fish were transformed into preserved food, now elevated to regional specialty status.

独家私藏情报

**Flavor profile:** Jakoten tastes intensely of fish — the whole-ground tiny fish (including bones, heads, organs) create a concentrated umami flavor that some find overpowering, others addictive. The bones are ground so fine they're undetectable as texture but contribute calcium and depth. The minimal flour binding means it's 70%+ fish, not the starchy product typical of mass-produced fish cakes. **Fresh vs. packaged:** Fresh jakoten (made daily, sold warm) is vastly superior to vacuum-packed supermarket versions. Fresh jakoten has crispy exterior and tender interior; packaged versions become rubbery. Buy from shops with high turnover — in Matsuyama, Dogo Onsen shopping arcade shops make fresh batches every 2–3 hours. Eat within 3–4 hours of frying for best quality. **Serving variations:** (1) Plain with soy sauce and ginger — classic street food style. (2) In udon soup — added to hot broth where it absorbs liquid and softens. (3) In oden — simmered in dashi with other ingredients. (4) Grilled over charcoal — some shops offer this variation where the cake is re-grilled for smoky char. **Souvenir packing:** Vacuum-packed jakoten (¥500–800/pack of 5) is sold at airports and train stations as omiyage. While inferior to fresh, it's shelf-stable for 1 week and acceptable for gift-giving. Include reheating instructions — toasting in an oven or toaster oven (3–4 minutes) partially restores texture.
