大王山葵農場是日本最大的山葵栽培設施,15公頃的梯田由北阿爾卑斯純淨的融雪水灌溉。真山葵極難栽培,需要冰冷潔淨的流水與特定的溫度範圍。農場年產150公噸山葵,供應全日本的高級餐廳。
遊客可走過田間,看山葵在清澈見底的湧泉水道中生長,並品嚐新鮮的山葵製品:山葵霜淇淋(意外地甜而溫和)、山葵可樂餅,以及現磨生山葵配米菓。農場還有一座曾用於黑澤明電影《夢》(1990)的復原水車小屋。山葵根莖需18–24個月才成熟,農場也展示這費工的栽培過程。
