A thick slice of raw sweet potato and a spoonful of sweet bean paste, wrapped in a plain wheat dough and steamed. That is all of it. The name means suddenly, and the two explanations offered locally are that it can be made suddenly when a guest arrives, and that it is made from ingredients a household always had.

It is a farmhouse snack rather than a confection — no sugar in the dough, the sweetness coming from the potato and the bean paste, and it is heavy enough to be a meal. Kumamoto grows a great deal of sweet potato and this is what happened to it. Shops across the prefecture sell it hot from the steamer, and it is best within a few hours, which is the argument for eating it here rather than carrying it home.

Sold across Kumamoto Prefecture at confectioners, roadside stations, department store food halls and railway station shops, usually steamed fresh through the day. The dumpling is a slice of raw sweet potato and sweet bean paste wrapped in unsweetened wheat dough and steamed. Individual shops' hours, rest days and prices vary. It is best eaten within a few hours of steaming.

**Eat it hot.** Within a few hours of the steamer. Cold it is dense and dull; hot it is a different thing entirely. **The dough has no sugar.** All the sweetness is the potato and the bean paste. That is why it reads as farm food rather than confectionery. **One is a snack, two is lunch.** They are heavier than they look. Pace accordingly. **Roadside stations are the best source.** Steamed on site through the day, cheaper than department stores, and made by the people who grew the potato. **Frozen ones exist.** Sold as souvenirs and steamable at home. They are a reasonable compromise if you cannot eat it fresh.
