The inland areas of Itoshima Peninsula are defined by rice paddy agriculture — the combination of volcanic soil from Mt. Raizan, abundant spring water, and 250 days of direct sunlight produces rice (primarily the Hinohikari variety) considered among the finest in Kyushu. The last decade has seen a return-to-farming movement that has brought young farmers from across Japan to establish organic operations, supplemented by dairy farms, oyster cultivation, and specialty vegetable growing.

**Rice harvest participation:** Several farms allow harvest day participation (October 15–25) — a 4-hour experience of cutting rice by hand (¥2,000–3,000 including lunch). Book directly through the Itoshima City Tourism Association (English available). **Farm stand system:** The roadside direct-sale stands (michi-no-eki Itoshima and smaller farm posts) sell Itoshima produce at prices 30–40% below supermarket equivalents. The Hinohikari rice (2kg bags, ¥1,200–1,600) is worth carrying home.
