Fukumimi (福みみ) is locals' preference — family-run, cash-only, no English menu, slightly smaller portions (12/order) but richer flavor from higher pork content. Both serve identical circular presentation with moyashi center. **Eating technique:** Hamamatsu gyoza are served piping hot with vinegar-soy dipping sauce (ratio 1:1 vinegar to soy).
