Higashimatsuyama Yakitori — location in Prefectura de Saitama, Higashimatsuyama

Yakitori in Higashimatsuyama is not chicken. It is pork cheek and jaw, skewered and grilled, and eaten with a chilli-spiked miso paste spooned on at the table — the name stayed even though the meat changed. It was worked out just after the war by the first owner of a shop called Daimatsuya, using a cut nobody else wanted, and the miso sauce spread from that one place to roughly fifty shops clustered around Higashimatsuyama Station.

The cut is the argument. Jaw meat is worked muscle with fat running through it, so it stays juicy over charcoal in a way breast never does, and the miso is hot enough to need beer. Shops range from counters with six stools to takeaway windows selling skewers by the dozen, and the town treats the whole thing as ordinary weekday food rather than a speciality to be marketed.

Información de acceso

Around fifty shops are concentrated within walking distance of Higashimatsuyama Station on the Tobu Tojo Line, from Ikebukuro. Most are small counters or takeaway windows; several open in the late afternoon and evening only, with one long-standing takeaway shop running 4:00 PM to 8:00 PM and taking orders from 1:00 PM. Hours, closing days and prices vary by shop — the tourist information at the station keeps a list.

Guía privilegiada

**Ask for extra miso.** It is served in a dish and locals load it. The chilli content varies between shops and is the thing people choose a shop by. **Kashira is the cut to order.** Pork cheek and jaw. Ordering chicken here is possible and misses the entire point. **Evening only at most shops.** A lunchtime visit will find the town shut. **Takeaway by the dozen is normal.** Skewers are sold in tens and twenties to take home, which is how most of the volume moves. **Fifty shops in one small town.** The density is the reason this is worth a train ride rather than a curiosity. Walking two or three in an evening is what people do. **Higashimatsuyama is from Ikebukuro.** Straightforward as an evening out of Tokyo, and the Musashi Kyuryo Forest Park and Yoshimi Hyakuana are both nearby if you want a daytime reason as well.
