El hoto es el plato de montaña de Yamanashi: fideos anchos y planos cocidos en caldo espeso de miso con calabaza, setas, zanahoria y cerdo. Se sirve burbujeando en una olla de hierro. La tradición dice que el señor feudal Takeda Shingen lo usaba como ración de campaña.
