Kuroishi's local dish is a solution to a specific problem: what to do with yakisoba in a town where the snow reaches the eaves. The answer, arrived at in a shop near a junior high school in the late 1950s, was to put it in hot soup. Tsuyu yakisoba is fried noodles with sauce, then submerged in ramen broth — which sounds like a mistake and is instead a genuinely coherent dish, because the sauce dissolves into the broth and gives it a sweet-savoury depth that ramen broth alone does not have.

The noodles are steamed with the vegetables and pork to give them a soft chew before the soup goes on, and the bowl comes with a small side dish and pickles. It costs ¥800 and is five minutes from the covered arcade street that is the other reason to come to Kuroishi.

Kuroishi. Walking distance from the Nakamachi Komise preservation district and about a short walk from Kuronan-Kuroishi Station on the Konan Railway. The original tsuyu yakisoba is ¥800, served with a small side dish and pickles. Confirm hours and rest days before travelling.

**Order the ganso version.** The original tsuyu yakisoba at ¥800 is the reference dish. Later variations exist around the town but this is the one the others are copying. **Expect soup, and expect it to work.** Fried sauce-coated noodles in ramen broth reads as a category error until you eat it. The sauce dissolving into the broth is what the dish is for. **Do it with the komise street.** The covered snow arcades are five minutes away and lunch here is the natural middle of that walk. **Several shops make it.** A local association promotes tsuyu yakisoba across Kuroishi and versions differ noticeably between shops. If Myoko is closed, the dish is still available in town. **Confirm before travelling.** Opening hours and rest days for this shop are not consistently published; a phone call saves the trip.
