Le marché matinal de Hakodate regroupe 250 étals où les vendeurs proposent crabe, coquilles Saint-Jacques, oursin et ikura pêchés à l'aube. L'une des attractions est de pêcher un calmar vivant dans le bassin du marché et de le faire préparer en sashimi sur-le-champ.
