From June to October, the fishing boats of Karatsu Bay go out at sunset using bright lights to attract squid to the surface — a technique called ika-tsuri that has been practiced here for generations. Several operators now offer tourist participation: boards a working fishing boat, learn squid jigging with hand lines, and keep what you catch (typically 5–15 squid per person in 3 hours). The night sea lit by the squid-attracting lights, with the dark silhouette of Karatsu Castle visible on shore, is one of the most atmospheric night experiences in Saga.

**Squid behavior:** The lights attract three species — aori-ika (large, prized), yari-ika (torpedo squid), and sumi-ika (cuttlefish). Aori-ika fight on the line and are the target. The guide will position you when a school is visible — jigging in the light cone attracts individual squid. **The catch cooking:** The dock crew cleans your catch and grills it on-site after the trip — the simplest possible preparation (salt, fire) on squid that was alive 30 minutes earlier is a defining experience in Japanese coastal food culture.
