Yobuko est un petit port de pêche réputé pour son calmar ultra-frais. Le marché matinal s'étend sur 200 mètres avec des étals vendant fruits de mer et calmar vivant préparé en sashimi sur-le-champ : si frais que les ventouses bougent encore.

**Live squid restaurant tip:** The restaurants adjacent to the market serve ika no ikizukuri (live squid sashimi) — the squid is cleaned tableside and served in its own body, transparent and moving slightly. The second course is the fried body served 15 minutes later while you finish the sashimi. One squid (¥1,200–1,800) feeds one person adequately. Arrive before 9:00 for minimal wait. **What else to buy:** Dried squid (surume) seasoned with Kyushu soy makes an extraordinary travel gift — vacuum packed, shelf-stable for 6 months, and markedly different from supermarket versions.
