Shikairoo a ouvert en 1899 et est le berceau du chanpon, le plat le plus emblématique de Nagasaki : des nouilles épaisses dans un bouillon onctueux d'os de porc avec fruits de mer, légumes et pousses de soja. Créé pour nourrir les étudiants chinois à moindre coût, il est devenu l'identité culinaire de la ville.

**The view factor:** Shikairo's fourth floor has a dining room with floor-to-ceiling windows overlooking the harbor — the original reason Chen chose this location. Request window seating when booking (reservations recommended for dinner). **Champon Museum:** The building's third floor houses a small museum documenting champon's invention with historical photographs, Chen's original cooking implements, and a replica of the 1899 kitchen. Entry ¥200, included with meal. **Sara udon comparison:** Order both champon (soup noodles) and sara udon (crispy fried noodles with thick sauce) to understand the two foundational Nagasaki noodle dishes. Sara udon was Shikairo's second invention, created as a dry alternative for take-out customers.
