Funazushi

Funazushi is what sushi was before it involved vinegar or raw fish. Nigorobuna, a carp found only in Lake Biwa, is caught in spring, salted for months, then packed in cooked rice in summer and left to ferment under a weight until winter. The rice is discarded and the fish is eaten in thin slices — sour, salty, dense, with soft bones and a smell that arrives before the plate does.
It is the oldest continuously made form of sushi in Japan and it is an acquired taste even for Japanese visitors. Shiga treats it as a delicacy and a new year food, served in slices with sake or poured over with hot tea. Producers cluster around the eastern shore, several of them farming nigorobuna themselves because the wild population collapsed, and most sell whole fish or vacuum-packed slices to take away.
