Oyaki (おやき) are Nagano's traditional steamed dumplings made from buckwheat or wheat dough filled with local vegetables, mushrooms, or sweet fillings. The dumpling's origin lies in Nagano's mountainous terrain and cold climate, where rice was scarce but buckwheat and vegetables thrived. Oyaki were portable, filling, and made from ingredients available in mountain villages.

Traditional fillings include nozawana (pickled mustard greens), wild mushrooms, eggplant-miso, kabocha (pumpkin), and red bean paste. The dumplings are either steamed (mushi-oyaki, soft and fluffy) or grilled (yaki-oyaki, crispy bottom). Oyaki shops are found throughout Nagano, especially near train stations, temples, and tourist areas. They're eaten as snacks, breakfast, or light meals. The best oyaki are made fresh daily using local seasonal vegetables.
