強棒麵——粗小麥麵浸在乳白色的豚骨雞高湯中,鋪滿海鮮與蔬菜——是1899年由長崎中華街四海樓的中國廚師陳平順所發明。這道菜原是給在長崎求學的中國留學生的員工餐,設計上講求營養與飽足。創始的四海樓至今仍在同一處俯瞰長崎港的山丘上營業,陳氏第四代後人守著原始配方。
決定性的特徵:湯頭不是清澈的豚骨,而是豬骨、雞與豬油乳化而成的不透明白湯。麵比拉麵粗,特別訂製以吸附濃厚的湯。配料——必有高麗菜、豆芽、花枝、蝦與豬肉——先以大火快炒再入湯,帶來一般拉麵沒有的鑊氣。
