Tekone-zushi is slices of bonito or tuna marinated in soy and mirin, laid over vinegared rice and mixed in by hand. The name comes from that mixing — te-kone, hand-kneaded — and the dish began on the fishing boats of Ise-Shima, where crews working the bonito grounds needed to eat quickly without cooking.

They had rice, they had the catch, they had soy, and they had one bowl. Everything went in and was mixed by hand while the boat was moving. What is now served in restaurants around Toba and Shima on lacquer with shiso and ginger is the same combination formalised, and the fish is still local. It has been designated one of the hundred rural food traditions of Japan by the agriculture ministry.

The restaurant version is the same thing plated. **Bonito is the original fish.** Tuna is common now and perfectly good, but katsuo is what the boats were catching. **Ise-Shima is where to eat it.** Toba and Shima rather than Ise city, where the pilgrimage food dominates. The fish is landed a few kilometres away. **Pair it with the ama.** The women divers of this coast are the other food tradition here, and many ama huts serve grilled shellfish alongside. **It travels badly.** Marinated raw fish on vinegared rice. Eat it where it is made rather than buying it for the train.
