El basashi (sashimi de carne de caballo) es la especialidad más singular de Kumamoto y una de las experiencias gastronómicas más sorprendentes de Japón. La carne, servida cruda en lonchas finas con jengibre rallado, cebolleta y salsa de soja con ajo, tiene un sabor suave y ligeramente dulce, con una textura que recuerda al atún magro.

Kumamoto consume más carne de caballo que cualquier otra prefectura de Japón. The local iichiko barley shochu complements the sweet meat without overpowering. Ask for 'basashi to shochu' set. **Take-home:** Frozen vacuum-packed basashi is sold at Kumamoto Airport and major supermarkets (¥1,200–2,000/200g). Legal to bring back to most countries as it's frozen and sealed.
