L'okonomiyaki facon Hiroshima est fondamentalement different de celui d'Osaka : au lieu de melanger tous les ingredients, on le construit en couches — pate fine, montagne de chou, germes de soja, nouilles yakisoba, porc, oeuf — empilees sur la plancha dans un processus presque hypnotique. Le resultat est un disque croustillant a l'exterieur, juteux a l'interieur, nappe d'une sauce douce et epaisse.
Le lieu le plus emblematique pour le gouter est Okonomimura, un immeuble de quatre etages abritant 24 echoppes ou chacune defend sa propre recette. S'asseoir au comptoir face a la plancha et regarder le cuisinier assembler l'okonomiyaki fait partie integrante de l'experience.
