Saga beef (佐賀牛) consistently ranks in Japan's top 5 wagyu evaluations — ahead of the nationally famous Kobe beef in fat quality assessments — yet remains virtually unknown outside Japan. The meat is produced from Kuroge wagyu raised in Saga's humid climate and fed specific local grain blends. Kappo (counter dining, chef-service) restaurants in Saga City serve Saga beef at prices that would be unthinkable in Tokyo — a full tasting course at what would be a one-Michelin-star equivalent costs ¥8,000–12,000 in the city.
