Ureshino Onsen

**Onsen tofu:** Ureshino's mineral water, when used to cook tofu, produces an unusually soft, cloud-like texture. The local specialty 'onsen tofu' (temperature-hot spring tofu) is served in small clay pots at restaurant counters throughout the town — a ¥800 lunch that is one of the great simple pleasures of Japanese food. **Tea pairing:** Ureshino-cha (local tea) and onsen tofu is the classic pairing.
