Ureshino Onsen is called 'bijin no yu' (beautiful woman's water) — the sodium bicarbonate-rich water has a slippery, silky quality that leaves skin noticeably softer within 20 minutes of soaking. The town has been a bathing destination for over 1,300 years; historical records indicate Empress Jingu bathed here on a military campaign in 200 AD. The onsen town is small (population 27,000) with 30 ryokan concentrated in a single riverside valley, making it feel intimate rather than sprawling.

**Onsen tofu:** Ureshino's mineral water, when used to cook tofu, produces an unusually soft, cloud-like texture. The local specialty 'onsen tofu' (temperature-hot spring tofu) is served in small clay pots at restaurant counters throughout the town — a ¥800 lunch that is one of the great simple pleasures of Japanese food. **Tea pairing:** Ureshino-cha (local tea) and onsen tofu is the classic pairing. The tea is grown in the mineral-rich soil around the springs and has an unusual depth. Try at Wakatake, the oldest tea shop, where the owner will explain the brewing difference.
