Walk out of Otaru Station and you'll find yourself surrounded by sushi shops—twenty-something of them packed into two blocks. Back when Otaru was Hokkaido's busiest port (1920s-1950s), fishing boats landed their catch right at the docks, and sushi shops opened to feed dock workers and herring fishermen. The tradition stuck even as Otaru's port declined.

What sets Otaru's sushi apart is the water temperature. Ishikari Bay and the Sea of Japan here run cold year-round, which gives the seafood a different flavor profile than what you get in warmer Pacific waters. The sweet shrimp (amaebi) has more snap, the uni tastes cleaner, and the scallops come out sweeter. You can taste it in the first bite. Book a month ahead if you want dinner there—¥12,000-15,000 gets you omakase with whatever came in that morning. If Sushi Zen is full, Otaru Masazushi serves quality sets from ¥3,500 without the wait.

避開人潮的訣竅

Sushi Street is busiest with tour groups 12:00–1:30 PM daily. Arriving at opening (11:30 AM) avoids the lunch peak. Weekdays see 40% fewer visitors than weekends. Summer (July–August) and Golden Week (late April–early May) are peak tourist periods — book premium restaurants well ahead.

**Sushi Zen reservations:** Call exactly 30 days ahead at 9:00am. They won't take reservations earlier, and popular slots fill within hours. If you don't speak Japanese, ask your hotel concierge to call—most Otaru hotels know the drill. The lunch omakase at ¥8,000 uses the same fish as dinner; you're just trading atmosphere for ¥4,000 savings. Counter seats 1-3 face the cutting board directly—you'll watch the master's knife work for ikura (he separates each egg by hand) and see how he torches the salmon belly for 4.5 seconds exactly. **What to expect at the counter:** The master doesn't explain much unless you ask. He'll serve 12-15 pieces over 40 minutes. Early pieces are mild (flounder, squid), building to richer flavors (toro, uni). The botanebi (botan shrimp) gets served two ways: the body as nigiri, the head grilled with salt. Bite through the head to get the miso inside—it's sweet and concentrated. When he serves bafun uni (the smaller, orange variety), you'll notice it tastes like the ocean without the metallic bitterness you sometimes get. That's because it was harvested within 48 hours, max. **Mid-range alternative:** Otaru Masazushi's main branch (Hanazono ) has a standing sushi counter where locals eat lunch. The jo-nigiri set (¥3,500) rotates based on the morning auction—herring in spring, iwashi in summer, saury in fall. During June-July uni season, add the uni-ikura don (¥2,800) if you want the full Hokkaido seafood experience without spending ¥10,000. Lunch rush hits at 12:15pm; arrive at 11:45am or wait 35 minutes. **Seasonal timing:** December through February brings shirako (cod milt), which looks off-putting but tastes creamy and slightly sweet. Spring (April-May) is botan shrimp season—the meat is firmer and sweeter than fall shrimp. Peak uni runs June 15-July 31; after August 1, quality drops noticeably. Fall brings ikura from salmon returning to spawn; the eggs are larger and pop louder than spring ikura. **Sake pairing:** Takasago Brewery sits 15 minutes north in Asahikawa. Their Kokushi Muso junmai pairs well with fatty fish (toro, mackerel) because the acidity cuts through the oil. For leaner fish (flounder, scallop), try their Kita no Nishiki—it's drier and won't overpower delicate flavors. Most shops pour 60ml servings for ¥800-1,200. If the chef pours you sake halfway through your omakase, it's a sign you're eating at the right pace.
