Le basashi (sashimi de viande de cheval) est la spécialité la plus singulière de Kumamoto et l'une des expériences gastronomiques les plus surprenantes du Japon. La viande, servie crue en fines tranches avec du gingembre râpé, de la ciboule et de la sauce soja à l'ail, possède un goût délicat et légèrement sucré, avec une texture rappelant le thon maigre.

Kumamoto consomme plus de viande de cheval que toute autre préfecture du Japon. Les morceaux vont de la partie maigre (akami) au persillé (toro-basashi), qui fond en bouche comme un otoro de thon. C'est un plat qui bouscule les préjugés mais qui, une fois goûté, convertit généralement les sceptiques en admirateurs.

The local iichiko barley shochu complements the sweet meat without overpowering. Ask for 'basashi to shochu' set. **Take-home:** Frozen vacuum-packed basashi is sold at Kumamoto Airport and major supermarkets (¥1,200–2,000/200g). Legal to bring back to most countries as it's frozen and sealed.
